Night 1 – I slept like a rock, despite waking up to pee 3 times (drinking over a gallon of water a day takes a toll on the old bladder) and Rebel waking up, standing by my bed at 3:00 a.m. requesting milk.
Woke up feeling good, on morning 2. Stepped on the scale and it said I was down 2 lbs.
I had to bring all 3 kids to school this morning, so cooked my oatmeal (& blueberries) and put it in a to-go container along with my organic Greek yogurt & blueberries.
Ate the yogurt on the way to work. Ate my oatmeal when I arrived at work.
By 12:00 p.m. I was hungry. Took my supplements, and then watched the clock until it was 12:30 p.m. > TIME TO EAT!
Ryan had cooked my chicken just the way I liked it with a little Himalayan salt & crushed red pepper! It tasted good on top of my salad!
Half way thru the day, I get a text from my best friend, that made me crack up!
Snack was the same as the day before – 10 whole wheat crackers + 1 hard boiled egg, which is what I will eat the rest of the week. ( I hard boiled 5 eggs on Saturday afternoon in preparation for the work week, along with making the brown rice ahead of time, since it takes 50 minutes to cook – PREPARATION IS ESSENTIAL)
I wondered how Tuesday’s would go, since it’s FIT CLUBnight.
I left work, picked up Rebel, and right as we are showing up to the Gym to get set up, it starts to POUR. I get soaked, which means I am EVEN more cold!
I elected to work out because we were doing P90X3 tonight & I didn’t get a chance to do it at Super Sunday!
I made it through most of the workout without feeling totally fatigued!
I drank lots of water, which helped the hunger. Staying busy kept me from realizing how hungry I was.
But as soon as I pulled into the gate – I instantly felt ravenous.
It luckily only took me about 10 minutes to prepare my meatless taco – Southwestern Veggie Taco. It was delish! I added some cilantro because I am a CILANTRO-FREAK!
It made so much that I will be eating the leftovers for day 3’s dinner. I hate to waste food.
- ¼ medium avocado, mashed
- 2 Tbsp. fresh salsa (pico de gallo)
- 1¼ cup Black Beans and Rice (see recipe on pg. 75)
- ¼ cup cooked corn kernels
- 1 (6-inch) corn tortilla
- Combine mashed avocado and fresh salsa in small bowl; mix well, Set aside.
- Place Black Beans and Rice and corn on one half of tortilla; fold.
- Serve with avocado and salsa mixture.

It is on now to serve as a reminder of what I am doing for my body & my health, as well as my future!
Despite having a long day at work. Fit Club. Getting home at 7:45 p.m., having to pack my foods for day 3 and deal with other household responsibilities, I still managed to head to bed around 9:20 p.m.
The moral of the story is: Time is never really a problem, it’s more or less if you find that it’s important enough or not!
