Meal Hording with Mindy – Breakfast ideas


Breakfast Option 1 – PB and Strawberry Oatmeal: 
1 YELLOW – 1/2 c. oatmeal 
1 PURPLE – 1 c. strawberries
1 teaspoon – 1 tsp. PB
Prepare oatmeal as directed.
Add PB. Add 2 tbsp. unsweetened almond milk if too thick. 
Top with strawberries
Breakfast Option 2 – Spinach and Cheese Omelette 
1 RED- 2 eggs (or 1 egg 3 tbsp. egg whites)
1 GREEN – 1 c. chopped spinach
1 blue – tbsp. of organic mild cheddar cheese
1 teaspoon – 1 tsp. organic coconut oil 
Heat oil on medium.
Add scrambled eggs to pan.
Lift cooked edges up and let liquid run underneath. 
Add chopped spinach. 
Add cheese. 
Fold in half when eggs are cooked through.
Serve.
Breakfast Option 3 – Greek Yogurt Parfait: 
1 RED – 3/4 c. Plain Greek Yogurt
1 PURPLE – 1 c. strawberries
1 BLUE – 8 walnut halves
Layer 1/2 yogurt, 1/2 raspberries.
Repeat. 
Top with walnut and cinnamon. 
Add 1 tsp. stevia if you prefer it sweet. 
Breakfast Option 4 – Breakfast Sandwich 
1 RED – 1/3 c. egg whites + 2 small slices of Boar’s Head Canadian Bacon
1 yellow – 100% whole wheat 
1 blue – 2 tbsp. of organic mild cheddar
Spray small microwave safe glass dish with olive oil spray
Layer with 2 slices of Canadian Bacon.
Pour in egg whites. 
Microwave for 1:30 (30 seconds at a time, so it doesn’t explode)
Toast English Muffin while cooking and slice cheese. 
Layer when egg is done cooking. 
Optional: Top with Himalayan Salt and Crushed Red Pepper.
